Amarena cherries are small, dark, sour cherries typically grown in the Bologna and Modena regions of Italy. They are known for their distinctively intense flavor and are often preserved in syrup, making them a popular ingredient in desserts and confections.
They are celebrated for their rich, tangy taste and deep, vibrant color, adding a sophisticated touch to various culinary creations, from pastries and ice creams to cocktails.
Ingredient Notes
Below are ingredient notes. For the complete list and quantities, please refer to the recipe card located at the bottom of the page.
- Cherries- I use Amarena cherries in the brownie batter and fresh bing cherries for garnish.
- Cocoa powder- Use dutch-process cocoa powder for a deep, rich chocolatey flavor.
- Butter- Use unsalted butter for the moisture and flavor in the brownie batter.
- Sugar- I use white granulated sugar.
- Eggs- I use 3 large eggs. Make sure to pull them 2 hours before mixing to allow them to come to room temperature.
- Chocolate- I use semi-sweet chocolate in this recipe. You can also use dark chocolate but I do not recommend milk chocolate as it may result in overly sweet brownies.
- Heavy cream- Make sure the cream is very well chilled before whipping.
- Powdered sugar- Sift to remove any clumps.
- Vanilla- Use pure vanilla extract for the best flavor.
Substitutions
- Cherries- If you can’t find amarena cherries, you can substitute with Maraschino cherries. However, Maraschino cherries are typically sweeter and have a different taste compared to the intense, tangy flavor of amarena cherries. I strongly recommend using amarena cherries for the best cherry flavor.
- Chocolate chips- You can make these brownies with our without them.

Step By Step Instructions
STEP 1: Preheat oven to 350℉. Spray a 8×8 inch pan with non-stick baking spray. Line the bottom and 2 sides of the pan with parchment paper.
STEP 2: Melt butter and chocolate. In a bowl, combine semi-sweet chocolate chips and butter. Place bowl over double boiler and stir until melted. Then, remove from heat and let cool for 5 minutes.


STEP 3: Mix the dry ingredients. Sift together, flour, cocoa powder, and salt.
STEP 4: Beat the eggs. Use a mixer with a whisk attachment. Whip the eggs, sugar, and vanilla for 5 minutes. The mixture will turn pale yellow and thicken slightly.


STEP 5: Stir in melted chocolate. Stir the cooled chocolate mixture into the egg mixture.
STEP 6: Combine. Gently fold the dry ingredients into the wet ingredients until just combined. Avoid over mixing. Then, fold in the chocolate chips.


STEP 7: Bake. Pour the batter into prepared pan. Then, drop small spoonful’s of the chopped amarena cherries on top. Use a wooden skewer to swirl the cherries into the brownie batter. Bake for 45 minutes or until the center of the brownies no longer jiggles.
STEP 8: Cool. Remove the brownies from the oven and allow them to cool completely before slicing.


STEP 9: Make whipped cream. In a large mixing bowl, add heavy cream, powdered sugar and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form.
STEP 10: Finish. Top the brownies with homemade whipped cream, chocolate shavings and fresh cherries for garnish.
Expert Baking Tips
Don’t overmix. When adding the dry ingredients to the wet ingredients, fold them in gently and just until combined. Overmixing can lead to dense and tough brownies.
Line the baking pan. Use parchment paper to line your baking pan, leaving an overhang on the sides. This makes it easier to lift the brownies out of the pan for cutting and serving.
Room temperature ingredients. Ensure that your eggs and butter are at room temperature before mixing. This helps create a smooth and well-incorporated batter.
Measure flour properly. Use the spoon and level method to measure flour accurately. Spoon the flour into your measuring cup without packing it down, then level it off with the flat edge of a knife. This prevents adding too much flour, which can make the brownies dense and dry.
Bake slightly under. For a fudgy texture, bake the brownies slightly under. Check them a few minutes before the recommended baking time. They should be set around the edges but still slightly soft in the center. The brownies will continue to cook as they cool.

However there’s no temperature for baking. I did 325 for 52 minutes.
