Ingredient Notes

Below are ingredient notes. For the complete list and quantities, please refer to the recipe card located at the bottom of the page.

  • Blueberries- Use fresh blueberries for the best flavor and texture. Look for blueberries that are deep blue-purple, firm, smooth, and have a powdery surface. Avoid berries that are green or soft.
  • Flour- All purpose flour gives these fritters the best, tender crumb. Make sure to spoon the flour into the measuring cup and level it off with the back of a knife to avoid excess flour.
  • Sugar- White granulated sugar helps to moisten these fritters as well as sweeten them.
  • Baking powder- Gives these fritters their fluffy texture.
  • Cinnamon- Adds a warm flavor and pairs perfectly with the blueberries.
  • Vanilla- Use pure vanilla extract for the best flavor.
  • Milk- I recommend using whole milk. Make sure to pull the milk from the refrigerator 1 hour before mixing so it has time to come to room temperature.
  • Eggs- I use large eggs. Make sure they’re at room temperature.
  • Butter- Unsalted, melted and cooled slightly.
  • Powdered sugar- Used to make the glaze for the fritters.
  • Blueberry jam- Use your favorite brand. I used this one.
  • Oil– Use a neutral oil for frying such as canola or vegetable.

Substitutions and Variations

  • Flour- For a gluten-free option, use a 1:1 gluten-free baking blend.
  • Dairy- You can use coconut oil, vegan butter, or a plant-based milk like almond, soy, or oat milk to make these fritters dairy-free.
  • Blueberries- If blueberries aren’t available, use diced apples, raspberries or blackberries. You can make a different flavored glaze to complement each fruit.

Expert Tips

  • Fresh blueberries- Use fresh blueberries for the best flavor and texture. They maintain their shape and provide a better bite. Frozen blueberries contain more moisture which can lead to a runnier batter and the blueberries can become mushy.
  • Temperature control- Maintain the oil temperature between 350℉ and 360℉. Too hot, and the fritters will burn on the outside while remaining raw inside; too cool, and they’re absorb too much oil.
  • Frying- These fritters will splatter because of the fresh blueberries, so I suggest using a deep dutch oven or a splatter screen. Also, make sure to skim the oil in between batches to keep the oil clean.
  • Don’t over-mix. Over-mixing develops the gluten in the flour, which results in a less desirable fritter texture. Mix the batter just until combined.
  • Evenly sized fritters. Use a measuring cup or ice cream scoop to ensure evenly sized fritters. This helps them cook evenly as well.
  • Glaze while warm- If you’re glazing the fritters, do so while they are still warm. This allows the glaze to get into all the crevices.

FAQ

What should I do if my fritters are undercooked inside?

If your fritters are browning too quickly on the outside while remaining raw inside, reduce the oil temperature slightly and cook them longer at a lower heat. This allows the inside to cook through without burning the exterior.

Can I add any flavors to the fritter batter?

Yes! Adding a touch of nutmeg, cardamom or lemon zest to the batter can enhance the flavor of the fritters.

Can I use different fruit instead of blueberries?

Yes, you can substitute other small fruits such as chopped apples, peaches (when in season), or strawberries. Do a simple vanilla glaze to complement the different flavors.

How can I keep my fritters crispy for longer?

After frying, place the fritters on a wire rack to drain excess oil and keep them crispy. Avoid stacking them, as this can trap steam and make them soggy.

What type of oil is best for frying fritters?

Use a neutral oil with a high smoke point, such as canola or vegetable oil. These oils maintain stability at high temperatures and don’t impart strong flavors to the fritters.

Making Ahead, Storing and Freezing

You can prep these Blueberry Fritters by making the dough ahead of time and letting it sit in the fridge, covered, for several hours or overnight.

After frying, these fritters are best enjoyed on the same day they are made, but you can store any leftovers in an airtight container or ziplock bag once they have cooled. They can stay at room temperature for 2 days.

To freeze the fritters, let them cool completely. Then, place the cooked (unglazed fritters) into a ziplock bag. Freeze for up to 2 months.

Helpful Tools and Equipment

  • Dutch oven or deep-frying pan- Use a heavy-duty, thick-walled pot that retains heat well, ensuring consistent frying temperatures.
  • Thermometer- To monitor oil temperature, use a candy thermometer.
  • Slotted spoon or spider strainer- For safely removing fritters from pot, as well as excess oil.
  • Wire rack- To place fritters on after frying, allowing excess oil to drain and keeping them crispy.
  • Ice cream scoop or measuring cups- To create uniformly size fritters for even cooking.
