    Churro Pancakes with Cinnamon Chocolate Sauce

    These churro pancakes are fluffy and so easy to make. They're brushed with melted butter, sprinkled with cinnamon sugar and drizzled with a cinnamon chocolate sauce.

    Lastly, I top these pancakes with warm churros and fresh whipped cream. You will love these pancakes!

    Churro Pancakes are brushed with melted butter, cinnamon sugar and drizzled with a cinnamon chocolate sauce and churro bites.

    These churro pancakes are the perfect brunch item and everyone will go nuts over them! They have a great cinnamon flavor and the crispy churros on top are the actual ones they sell at Disneyland.

    Skip the syrup and indulge in this incredibly easy cinnamon chocolate sauce. It really elevates these flavors to the next level!

    WHY YOU WILL LOVE THIS

    • Buttermilk pancakes- These pancakes are tender and fluffy with a touch of vanilla extract.
    • Cinnamon sugar- I sprinkle each pancake with a generous amount.
    • Chocolate sauce- This chocolate sauce is so easy to make and has a hint of cinnamon.
    • Disneyland churros- These pancakes are topped off with warm churros sold inside Disneyland Parks.

    INGREDIENT NOTES

    • Buttermilk- I prefer to use buttermilk in my pancakes because it helps make them light and fluffy. Substitute 1 cup of whole milk with 1 tablespoon of lemon juice incase you do not have buttermilk on hand.
    • Butter- I use unsalted butter in the pancake batter but you can also use oil if you prefer.
    • Vanilla Extract- Use pure vanilla for the best flavor.
    • Chocolate chips- I use Ghirardelli semi-sweet chocolate.
    • Tio Pepe's churros- These are the same churros that you can find at Disneyland.

    STEP BY STEP INSTRUCTIONS

    STEP 1: Combine dry ingredients. Sift flour, sugar, baking soda, baking powder, cinnamon and salt in bowl.

    STEP 2: Mix wet ingredients. In separate bowl, add milk, melted butter, vanilla and egg. Whisk until combined.

    STEP 3: Mix wet and dry ingredients. Pour wet ingredients into dry ingredients. Whisk just until incorporated. Do not over mix.

    Flour, sugar, cinnamon, baking powder, baking soda and salt.

    STEP 4: Make chocolate sauce. Heat heavy cream until scald. Pour over chocolate chips and add cinnamon. Whisk until smooth.

    STEP 5: Bake churros. Place frozen churros onto a cookie sheet. Roll in cinnamon sugar. Slice into bite size pieces.

    STEP 6: Cook pancakes. Scoop batter onto a nonstick griddle or pan. Flip pancakes once they begin to bubble.

    STEP 7: Coat with cinnamon sugar. Brush each pancake with melted butter. Sprinkle generously with cinnamon sugar.

    STEP 8: Garnish and sauce pancakes. Top pancakes with whipped cream, churro bites and chocolate sauce.

    TOPPINGS FOR PANCAKES

    Once the pancakes have been cooked and coated with cinnamon sugar, I drizzle warm chocolate sauce over the pancakes.

    I cut the baked churros into small bite sizes pieces and place them on top of the pancakes. You can also add some strawberries or any other berries to add a pop of color and freshness.

    EXPERT TIPS

    Make sure to mix batter just until incorporated. If you over-mix, your pancakes will be chewy instead of light and fluffy.

    Allow pancake batter to rest for 5-10 minutes. This will allow gluten to relax and any lumps to smooth out.

    Use a preheated nonstick griddle or seasoned pan when cooking pancakes.

    Wait until small tiny bubbles begin to form AND pop before flipping pancakes.

    What is best for cooking pancakes?

    Use a heavy nonstick griddle or seasoned pan for even heat distribution.

    How long should pancake batter rest?

    Allow pancake batter to rest between 5-10 minutes.

    Should I use butter or oil when cooking pancakes?

    This really is personal preference. Should you use butter vs. oil, make sure to wipe the pan in between batches so the butter does not burn.

    STORING AND FREEZING

    Store these churro pancakes inside a sealed container or Ziplock bag. Refrigerate them for up to 3 days.

    FREEZING

    These cinnamon sugar pancakes can be frozen. Stack pancakes in between wax or parchment paper. Place inside Ziplock bag and seal. Freeze pancakes for up to 2 months.

    To reheat pancakes, place in single layer inside microwave and heat for 30-60 seconds.

    Ingredients
      

    Pancakes

    • 1 cup All-purpose flour
    • 1 ½ tablespoon White granulated sugar
    • ¾ teaspoon Baking powder
    • ½ teaspoon Baking soda
    • ¼ teaspoon Salt
    • ¼ teaspoon Ground cinnamon
    • 1 Large egg
    • 1 tablespoon Butter unsalted, melted
    • 1 teaspoon Vanilla extract
    • 1 cup Buttermilk

    Cinnamon Sugar Topping

    • 4 tablespoon Unsalted butter melted
    • ½ cup White granulated sugar
    • 1 tablespoon Ground cinnamon

    Cinnamon Chocolate Sauce

    • ½ cup Heavy cream
    • 4 ounces Semi-sweet chocolate chips
    • ¼ teaspoon Ground cinnamon

    Instructions
     

    Pancakes

    • Sift flour, sugar, baking soda, baking powder, salt and cinnamon inside bowl.
    • In separate bowl, add buttermilk, egg, vanilla and melted butter. Mix until combined.
    • Whisk wet ingredients into dry ingredients. Mix just until incorporated. Make sure to not overmix.
    • Heat nonstick griddle or pan over medium-high heat. Pour ¼ cup of batter for 1 pancake.
    • Once bubbles begin to form and pop, flip pancake over. Cook for an additional minute.
    • Remove from pan and immediately brush with melted butter. Sprinkle generously with cinnamon sugar.

    Cinnamon Chocolate Sauce

    • Place heavy cream inside saucepan. Heat until scald.
    • Pour cream over chocolate chips. Add cinnamon and whisk until smooth. Drizzle on top of pancakes.

    Tio Pepe's Churros

    • Follow instructions according to instructions located on box. Cut into bit size pieces.
    • Place warm churros on top of pancakes and garnish with whipped cream and strawberries.
