Why You’ll Love These Cinnamon Sugar Pancakes
- Buttermilk pancakes- These pancakes are tender and fluffy with a touch of vanilla extract.
- Cinnamon sugar- I sprinkle each pancake with a generous amount.
- Chocolate sauce- This chocolate sauce is so easy to make and has a hint of cinnamon.
- Disneyland churros- These pancakes are topped off with warm churros sold inside Disneyland Parks.

Ingredient Notes and Substitutions
- Buttermilk- I prefer to use buttermilk in my pancakes because it helps make them light and fluffy. Substitute 1 cup of whole milk with 1 Tbsp of lemon juice incase you do not have buttermilk on hand.
- Sugar- I use white granulated sugar to sweeten the batter but you can also use light brown sugar.
- Leavening- To help these pancakes rise as they cook, I use both baking soda and baking powder.
- Cinnamon- Adds a nice warmth to the pancake batter.
- Butter- I use unsalted butter in the pancake batter but you can also use oil if you prefer.
- Vanilla Extract- Use pure vanilla for the best flavor.
- Chocolate chips– I use Ghirardelli semi-sweet chocolate.
- Tio Pepe’s churros- These are the same churros that you can find at Disneyland. I found mine at Smart and Final.

Expert Tips For The Fluffiest Pancakes
- Make sure to mix batter just until incorporated. If you over-mix, your pancakes will be chewy instead of light and fluffy.
- Allow pancake batter to rest for 5-10 minutes. This will allow gluten to relax and any lumps to smooth out.
- Use a preheated nonstick griddle or seasoned pan when cooking pancakes.
- Wait until small tiny bubbles begin to form AND pop before flipping pancakes.
