These Hawaiian roll breakfast sliders are piled high with buttery eggs, crispy applewood bacon, layers of cheddar cheese, and brushed with a simple honey butter.

Nothing tastes better than fluffy eggs, crumbled bacon, and melted cheese sandwiched between sweet Hawaiian rolls. Serve these Hawaiian breakfast roll sliders for weekend brunch, on Christmas morning or even for dinner.

Ingredient Notes
- Hawaiian Rolls- My favorite rolls are King's Hawaiian Original Sweet Rolls. They are incredibly soft and slightly sweet. They are also the perfect size for these sliders.
- Eggs- I use 8 large eggs.
- Bacon- I use applewood smoked bacon in this recipe. But feel free to use whatever bacon you have or substitute with breakfast sausage or sliced ham.
- Cheese- I use grated sharp cheddar cheese. I add some into my scrambled eggs as well as in two layers when I assemble the sliders.
- Butter- When I scramble my eggs, I prefer to cook them in butter. Butter makes everything taste better.
- Honey- I use a mild flavored honey, such as Clover.
Step By Step Ingredients
STEP 1: Cook bacon. Preheat oven to 375℉. Line a baking sheet with parchment paper. Lay bacon onto sheet in a single layer. Cook for 13-15 minutes until crisp and golden. Drain bacon onto a paper towel.


STEP 2: Cook eggs. Crack eggs into a medium size bowl. Stir in milk, ½ cup cheese, salt and pepper. Whisk together. Heat a large nonstick skillet over medium heat. Add 2 tablespoon of butter and swirl in pan until melted. Pour egg mixture into the pan.
Stir eggs occasionally until they are just cooked. Remember low and slow will result in the most fluffiest eggs. Try not to over cook them.


STEP 3: Make honey butter. Place honey and butter inside a small ramekin. Heat inside the microwave for 30 seconds until the butter is melted. Stir to incorporate.
STEP 4: Slice Hawaiian rolls. Using a serrated knife, slice the Hawaiian rolls in half horizontally. Make sure to keep the top half of the rolls attached together. Place the bottom rolls onto a parchment lined sheet pan.


STEP 5: Assemble. Place 1 cup of cheddar cheese onto the bottom portion of the rolls. Top with scrambled eggs. Then, cut bacon into bite size pieces and spread evenly on top of the eggs.
Next, add 1 cup of cheddar cheese. Add the top half of the Hawaiian rolls.
STEP 6: Bake sliders. Last but not least, brush the top of the rolls with the honey butter. Sprinkle with flaky sea salt (optional). Cover loosely with foil. Bake inside a 350℉ oven for 10 minutes.


Remove foil and bake for an additional 5 minutes until the cheese is melted and the tops are lightly golden brown. As soon as they're finished baking, serve them up on a wooden platter and dig in!
Variations
Because this recipe is so interchangeable, here are some other ingredients you can incorporate into these breakfast sliders.
Make it savory. You can omit the honey and add some chopped garlic, parmesan or fresh herbs to the butter. This will give these sliders a more savory flavor.
Add vegetables. Skip the meat and add your favorite vegetables. Sautéed spinach, mushrooms and red bell peppers are great choices. Also, roasted tomatoes would be great too!
Different meat. You can swap out the bacon for turkey bacon, Canadian bacon, sliced ham or breakfast patties.

Expert Tips
To get soft and fluffy eggs, make sure to use a nonstick pan. Cook the eggs on low heat and stir occasionally with a rubber spatula. The key is to cook them low and slow.
I always cook bacon in the oven. Less mess, burns and you don't have to keep an eye on it. Make sure to lay the bacon in a single layer so they crisp up evenly. I usually flip them over half way during the cooking process. Perfect bacon every time.
Adding the cheese onto the bottom of the rolls not only adds an extra layer of cheesy goodness, but helps prevent the rolls from getting soggy from the eggs. Don't forget this step!

Yes you can. Cook the bacon and eggs the night before. Place them in separate airtight containers and refrigerate overnight. Assemble and bake the sliders the next morning.
Feel free to use your favorite breakfast meat or add some veggies to make a vegetarian version. You can also use a different kind of cheese such as Monterey Jack or Swiss.
Yes! Once they are cool, wrap each individual slider with plastic wrap or foil. Place them inside a Ziplock bag to keep them fresh and freeze them for up to 2 months.

Storing and Freezing
Keep any leftover Hawaiian roll breakfast sliders inside an airtight container in the fridge for up to 3 days.
Freezing
Once the sliders have cooled, wrap each one individually with plastic wrap or foil. Place them inside a Ziplock freezer bag. Keep them frozen for up to 2 months.
To reheat, place them in a 350℉ toaster oven for 10-12 minutes or until warmed through.
