Ahi Tuna Nachos

These Ahi Tuna Nachos are the best appetizer.  Crispy wonton chips are topped with sesame crusted tuna, pickled ginger, cilantro, scallions and drizzled with a spicy mayo.  They are served alongside a Grogu wasabi guacamole.

STEP 1:  Cut wonton wrappers into quarters at a diagonal.

STEP 2:  Heat oil to 350 degrees and fry for 30 seconds until golden brown.  Season with salt.

STEP 3:  Season tuna with salt and coat with black and white sesame seeds.  Heat pan until hot and add oil.  Cook for 1 minute on each side.  Remove and cut into small cubes.

STEP 4:  For spicy mayo, stir together mayonnaise, Sriracha and lime juice.  Season with salt.

STEP 5:  To make wasabi guacamole, combine avocados, wasabi paste, cilantro, jalapeños, lime juice and soy sauce.  Season with salt.

STEP 6:  Spread guacamole in a circular shape.  Add jalapeños for the ears, black olives for the eyes and a sliver of jalapeño for the mouth.  Add wonton chips for his body.

STEP 7:  Top wonton chips with seared tuna, seaweed salad, cilantro, pickled ginger, scallions, sesame seeds and drizzle with spicy mayo.
