Cherry Popsicles with Greek Yogurt

These homemade cherry popsicles swirled with coconut Greek yogurt and plump, juicy Bing cherries are the perfect treat for the upcoming warm weather.

STEP 1:  Wash, pit and cut cherries in half.

STEP 2:  Place cherries, lemon juice, lemon zest and honey inside saucepan.

STEP 3:  Cook over medium-high heat for 5-7 minutes until juices are released and cherries are slightly wilted.  Set aside to cool.

STEP 4:  Place cooled cherries inside food processor and blend until pureed.  It's ok if there's some bigger chunks of cherries left.

STEP 5:  In a bowl, add coconut yogurt, vanilla extract and pureed cherries.

STEP 6:  Gently stir yogurt and cherries together.  To get the swirly look, do not over mix.

STEP 7:  Place cherry-yogurt mixture inside popsicle molds.  Freeze for 6-8 hours or overnight.
