Chocolate Chip Marshmallow Cookies

These chocolate chip marshmallow cookies have crisp, golden edges and buttery, marshmallowy centers.

STEP 1:  Place the butter, brown sugar and sugar inside a bowl of a stand mixer. Using the paddle attachment, beat on high speed for 2 minutes.  Then, add eggs, one at a time, followed by the vanilla extract.

STEP 2:  Next, add the dry ingredients. Mix just until combined. Then, fold in the chocolate chips. Refrigerate the dough for 30 minutes.

STEP 3:  Use a 2 oz ice cream scoop to scoop the cookie dough. Place your thumb into the cookie dough to create an indentation in the center.

STEP 4:  Then, place a marshmallow inside the hole.

STEP 5:  Bake for 13 minutes.  Then, remove from the oven and while the cookies are still warm, sprinkle additional chocolate chips on top.
