Chocolate Fudge Cupcakes

Super moist and extra chocolatey, these chocolate fudge cupcakes are a chocolate lovers dream! The cupcakes are piped with the most luscious chocolate ganache frosting and decorated with white chocolate Mickey ghosts.

STEP 1:  In a large bowl, sift together, flour, sugar, cocoa powder, baking soda, and salt.

STEP 2:  In a separate bowl, combine eggs, buttermilk, vanilla and oil

STEP 3:  Slowly whisk in wet ingredients into dry ingredients.  Once incorporated, add in boiling water and mix until combined.

STEP 4:  Using an ice cream scoop, scoop batter ⅔ full into cupcake liners.

STEP 5:  Bake cupcakes at 350℉ for 15-17 minutes.

STEP 6:  Heat heavy cream in saucepan over medium heat. Once it begins to scald, pour over chocolate chips. Let sit for 2 minutes. Then, stir together until smooth.

STEP 7:  Once the ganache has cooled and thickened, fill piping bag with ganache. Pipe a swirl of frosting on top of cupcakes.
