Chorizo Orzo with Sun-Dried Tomatoes

Chorizo Orzo is a tasty dish with orzo pasta, spicy chorizo, salty parmesan cheese, and tangy sun-dried tomatoes. It's a comforting and satisfying meal with a delicious blend of bold spices and rich cheese.

STEP 1:  Heat the oil in a skillet over medium heat and add the sliced chorizo. Cook until the chorizo is browned and cooked through, about 2-3 minutes.

STEP 2:  In the same skillet, add the chopped onion and cook until translucent and slightly caramelized.

STEP 3:  Then, stir in the orzo pasta. Toast pasta lightly, stirring frequently, for another 2-3 minutes.  Lastly, add the garlic and cook just until fragrant, about 1 minute.

STEP 4:  Stir in the chopped sun-dried tomatoes, mixing well to combine all the ingredients.

STEP 5:  Pour in the chicken broth and bring mixture to a boil. Reduce the heat to low, cover the skillet, and let the orzo simmer gently for about 10-12 minutes.

STEP 6:  Stir in the parmesan cheese and chopped parsley. Squeeze a half of a lemon to help brighten up the flavors. Taste the orzo and adjust the seasoning with salt and pepper.
