Creamy Cajun  Potato Salad

Get ready for a taste of Louisiana with this easy to make Cajun Potato Salad. This jazzed up side dish is made with tender Yukon gold potatoes, perfectly cooked boiled eggs, crunchy veggies and a creamy dressing with a spicy kick.

STEP 1:  Peel and dice potatoes.  Cover with cold water and add salt.  Bring to a boil.  Reduce heat to medium and simmer for 15 minutes until potatoes are fork tender.  Drain and let cool.

STEP 2:  Dice red onions, celery and green bell peppers.

STEP 3:  Inside a large bowl, combine diced veggies, chopped boiled eggs and cooled potatoes.

STEP 4:  For the dressing, combine mayo, dijon, dill relish, cajun seasoning, lemon juice and hot sauce.

STEP 5:  Whisk dressing until smooth.  Season with salt.

STEP 6:  Add dressing to potatoes, veggies and eggs.

STEP 7:  Mix potato salad until potatoes are coated evenly.  Add chopped parsley and season with additional salt, if needed.
