CREAMY HONEY CHEESECAKE

This baked honey cheesecake has a graham cracker crust and a tangy cream cheese filling that is sweetened with honey.  It's decorated with fresh raspberries, Nilla wafers and piped with melted chocolate for Pooh's face.

STEP 1:  Grind graham crackers until fine and mix with cinnamon, brown sugar and melted butter.

STEP 2:  Pour graham cracker crust into springfrom pan.  Using a measuring cup, compress crumbs to cover the bottom and sides of the pan.

STEP 3:  Beat cream cheese with sugar for 1 minute.  Add honey, vanilla and sour cream.  Mix until combined.

STEP 4:  Add eggs and egg yolks one at a time and mix on low speed just until combined.  Do not over mix.

STEP 5:  Pour batter into pre-baked crust.  Place cheesecake inside 10" cake pan, followed by 12" pan or large roasting pan.  Fill with hot water.

STEP 6:  Bake at 325 degrees for 60-70 minutes.  The center will be slightly jiggly and the edges puffed and firm.  When cooled, refrigerate for 8 hours or overnight.

STEP 7.  For Pooh's shirt, place two rows of fresh raspberries at the bottom of the cheesecake.  Add Nilla wafers for the ears and paws.  Melt chocolate and pipe his eyes, brows and nose.
