Creamy Mascarpone  Tomato Sauce

This mascarpone tomato sauce is made with juicy, ripe cherry tomatoes that are cooked with lots of fresh garlic, red pepper flakes and one secret ingredient, mascarpone cheese.

STEP 1:  Heat oil inside large pan; add garlic and red pepper flakes.  Cook for 1 minute.

STEP 2:  Add cherry tomatoes and season with dried oregano and salt.

STEP 3:  Cook tomatoes for 6-8 minutes until they begin to pop and release their juices.

STEP 4:  Add mascarpone cheese and reserved pasta water.  Stir until melted and combined.

STEP 5:  Add fresh basil leaves and stir to combine.

STEP 6:  Toss in cooked pasta noodles.  Mix until ingredients are incorporated.

STEP 7:  Garnish with parmesan cheese, basil leaves and extra mascarpone cheese.
