Custard French Toast

This custard French toast is made with sweet Challah and soaked inside a vanilla custard.  Perfect for weekend brunch or Mother's Day.

STEP 1:  Heat half and half, vanilla bean and cinnamon sticks until scalding.

STEP 2:  Whisk together egg yolks and sugar inside bowl.

STEP 3:  Pour infused half and half into the egg mixture a little at a time, making sure not to add it all at once or else you will scramble the eggs.

STEP 4:  Place liquid back into sauce pan and heat until custard thickens and coats the back of wooden spoon.  Strain through a fine sieve and refrigerate for 30 minutes.

STEP 5:  Slice challah bread into 1" thick slices.  Press into custard and let soak for a minimum of 6 minutes per side.

STEP 6:  Heat skillet and add butter.  Once hot and melted, add soaked bread.  Cook for 3-4 minutes on each side until golden and crisp.

STEP 7:  Top French toast with fresh berries and sliced bananas.  Dust with powdered sugar and serve with leftover custard and maple syrup.
