STEP 1: Place the cubed potatoes in a large pot and cover with cold water. Bring water to a boil, then, reduce heat to a simmer and cook the potatoes for 15 minutes or until they are fork tender.
STEP 2: In a mixing bowl, combine mayonnaise, mustard, apple cider vinegar, pickle juice, celery seed, and dill. Season with salt and pepper. Refrigerate until ready to use.
