Easter Mini Egg  Cookie Bars

Easter mini egg cookie bars are soft, chewy squares of goodness. These bars are studded with colorful mini chocolate eggs and are the perfect spring treat!

Combine softened butter, sugar and brown sugar inside large bowl.  With hand mixer, beat for 2-3 minutes until light and fluffy.

Add eggs and vanilla and beat for an additional 2 minutes.

Sift flour, baking soda and salt.  Add dry ingredients to creamed butter and egg mixture.  Mix just until combined.

Stir in first portion of white chocolate chips and M&M chocolate eggs.

Mix until white chocolate and M&M chocolate eggs are evenly distributed.

Grease 9x13 pan and line with parchment paper.  Press cookie dough into pan.  Bake at 325 degrees for 15 minutes.

After cookies have baked for 15 minutes, sprinkle remaining chocolate chips and M&M chocolate eggs on top.  Bake for an additional 10 minutes.  Let cool for 30 minutes and slice into squares.
