Gingerbread Latte Cookies

These gingerbread latte cookies are the perfect Christmas cookie. Made with sweet brown sugar, rich molasses, ground ginger and one unexpected ingredient - espresso powder.

STEP 1:  Beat the butter, sugar and brown sugar on high speed for 2 minutes in a large bowl.

STEP 2:  Beat in the egg, vanilla and molasses. Mix until smooth.  Add in the dry ingredients and mix until just combined.

STEP 3:  Scoop the cookie dough using a 1.5 oz ice cream scoop.  Let the dough chill in the refrigerator for 1 hour.

STEP 4:  Preheat oven to 350°. Roll each cookie inside the granulated sugar.

STEP 5:  Place cookies onto a parchment lined baking sheet, 2 inches apart. Bake cookies for 12-14 minutes.

STEP 6:  Once the cookies have cooled, drizzle on the coffee glaze. Let the icing harden before serving.
