This Lemon Berry Mascarpone Cake is infused with vibrant lemon citrus flavor and boasts a moist texture, complimented by a rich mascarpone frosting that gives a perfect balance of sweetness.

STEP 1:  In a large bowl, beat together the butter, sugar and lemon zest on medium speed until the mixture is light and fluffy, approximately 3 minutes.

STEP 2:  Next, add the eggs one at a time, ensuring each is fully incorporated before adding the next.  After adding the eggs, stir in the lemon juice and vanilla extract.

STEP 3:  In a separate bowl, sift the flour, baking powder, baking soda and salt. Then, begin by adding some of the flour mixture, then alternate with the milk, continuing until all the ingredients are incorporated.

STEP 4:  Pour the cake batter into the prepared pan. Bake for 30-35 minutes or until toothpick inserted into the center comes out clean.

STEP 5:  Whip mascarpone, powdered sugar and lemon zest until fluffy.  Then, stir in whipping cream and whip until stiff peaks form.

STEP 6:  Spoon the frosting on top of the cooled cake, spreading it evenly with an offset spatula.

STEP 7:  Top cake with fresh berries that have been mixed with strawberry jam.  Serve and enjoy!
