Lemon Curd Cookies

 These lemon curd cookies are so buttery and literally melt in your mouth. They have a lemony sugar crust and are filled with a tangy homemade lemon curd.

STEP 1:  Cream butter, powdered sugar and lemon zest inside a bowl.  Beat for 2-4 minutes until light and fluffy.

STEP 2:  Sift flour and salt directly over the creamed butter.

STEP 3:  Mix on medium speed just until the dough comes together.  Scoop into small balls with an ice cream scoop.

STEP 4:  Combine sugar and lemon zest inside food processor. Blend together.  Roll each ball of dough into lemon sugar.

STEP 5:  Using the back of a tablespoon, gently press on top of each cookie to make a divot for the lemon curd.

STEP 6:  Bake cookies for 15-17 minutes until the edges and bottoms of the cookie are lightly golden.  Let cool completely.

STEP 7:  Fill each cookie with a teaspoon of homemade lemon curd.
