Lemon Lavender  Cookies

These lemon lavender cookies are buttery shortbread infused with lavender and lemon zest.  They are decorated with edible flowers and make the perfect spring treat.

STEP 1:  Combine softened butter and confectioner's sugar in medium bowl.

STEP 2:  Add dried lavender, vanilla and lemon zest.

STEP 3:  Beat with hand mixer for 1-2 minutes until combined and fluffy.

STEP 4:  Add flour and salt and mix just until dough comes together.  Wrap in plastic wrap and refrigerate for 1 hour.

STEP 5:  Let chilled dough come to room temperature.  Flour surface and roll 1/4" thick.

STEP 6:  Punch out cookies with cookie cutter.  Place onto parchment lined sheet pan.  Chill for 30 minutes before baking.

STEP 7:  Place dried lavender and granulated sugar in food processor or mortar and pestle.  Grind until lavender is fine and mixed in with sugar.

STEP 8:  Par bake cookies for 6-8 minutes.  Let cool.  Brush with egg white and gently press flowers on top.  Brush with second coat of egg white and sprinkle with lavender sugar.  Bake for an additional 3-4 minutes until crisp and golden.
