Mango  Pico de Gallo

This mango pico de gallo screams summertime. It's made with chunks of ripe, juicy mangoes and tossed with crunchy vegetables.

STEP 1:  Take mangoes and peel with a vegetable peeler.

STEP 2: Slice each side of the mango off the white pith.

STEP 3:  Cut mangoes into small cubes.

STEP 4:  Finely dice onions, jalapeños, tomatoes and cilantro.  Add to bowl, along with mangoes.

STEP 5:  Add lime juice and season with salt.

STEP 6:  Toss together and let rest for 1 hour to allow all the flavors to blend together.

STEP 7:  Serve with warm tortilla chips or as a topping for tacos, salads or grilled chicken.
