Mickey Pretzels  with Cheese Sauce

These Mickey pretzels are the perfect snack for a crowd and so much fun to make during baseball season! These pretzels are soft and chewy and served alongside a creamy, cheesy mustard dipping sauce.

STEP 1:  Activate yeast with water and sugar in bowl.  Let bloom for 5 minutes until mixture become foamy with tiny bubbles.

STEP 2:  Combine flour, brown sugar, salt and softened butter in bowl of stand mixer.

STEP 3:  Add yeast mixture to dry ingredients and attach dough hook.  Knead dough for 10 minutes.

STEP 4:  Let dough rise in greased bowl for 1 hour.  Punch dough down and divide into 6 balls.  Take each ball and roll into a 24" rope.  Form into a thin U shape.

STEP 5:  Grab both ends of the dough and twist once to make a round circle in the center.

STEP 6:  Grab each end and tuck them underneath the dough to form Mickey ears.

STEP 7:  Boil baking soda and water and poach Mickey shaped pretzels for 30 seconds.  Remove and drain onto a silicone mat.  Brush with egg wash, sprinkle with salt and bake at 425 degrees for 11 minutes.  Remove from oven and brush with melted butter.

STEP 8:  Melt butter in sauce pan.  Add flour and whisk for 1 minute until bubbly.  Add milk and whisk until thickened.  Add cheddar cheese, cream cheese, smoked paprika, mustard and season with salt.  Serve with warm Mickey pretzels.
