These foolproof mini Basque cheesecakes are perfect for gifting this holiday season. Crustless, rich and creamy cheesecakes enclosed in the most delicious caramelized crust.

STEP 1:  Place the cream cheese, sugar and half of the cream inside a food processor. Process until the mixture is smooth. Scrape down the sides of the bowl as necessary.

STEP 3:  Add the eggs and vanilla to the cream cheese mixture and blend until smooth. Scrape down the sides of the bowl. Then, add the remaining heavy cream.

STEP 4:  If using a food processor, pour the cream cheese mixture into a large bowl. Then, sift in your flour and salt. Whisk until smooth.

STEP 5:  Divide the batter into prepared cake pans. Then, place cheesecakes in the oven on the center rack and bake for 25 minutes.
