Peach Cobbler Egg Rolls

These peach cobbler egg rolls are the perfect dessert to make when peaches are in season. They are loaded with fresh peaches, warm spices and have a crispy golden shell that is to die for.

STEP 1:  Peel peaches with vegetable peeler and cut into 1/2" slices.

STEP 2:  Place peaches, brown sugar, lemon juice, salt, cornstarch, cinnamon and butter inside sauce pan.

STEP 3:  Cook peach filling for 5 minutes until bubbly and thickened.  Pour into bowl and refrigerator for 30 minutes until chilled.

STEP 4:  Place filling onto the bottom portion of egg roll wrapper.

STEP 5:  Fold over edge closest to you and tuck underneath filling.

STEP 6:  Fold over right and left sides of the wrapper and bring to the center of the egg roll.  Brush opposite side with egg wash and roll tightly.

STEP 7:  Preheat oil to 350 degrees.  Deep fry egg rolls for 5 minutes until golden brown.  Drain and roll in cinnamon sugar.  Serve with vanilla ice cream.
