Sweet Potato  Breakfast Hash

This sweet potato breakfast hash is warm and hearty and the perfect fall breakfast. A combination of sautéed sweet potatoes, caramelized onions, crisp bell pepper and savory sausage.

STEP 1:  Peel and cut sweet potatoes into small cubes.  Heat oil and cook for 10-12 minute until tender.

STEP 2:  Brown sausage and sauté  onions, bell peppers, and sage.  Stir in garlic and cook until fragrant.

STEP 3:  Combine sweet potatoes with sausage and veggies.  Add spices, butter, and season with salt and pepper.

STEP 4:  Drizzle with maple syrup and garnish with sliced green onions.

STEP 5:  To serve, fry up Mickey shaped eggs or any style of egg to go alongside the sweet potato hash.
