Juicy Bing cherries, creamy coconut Greek yogurt and a touch of honey come together to create the most satisfying treat on a hot summer day. These cherry popsicles with Greek yogurt are so easy to make and kids will love them.
Wash, pit and cut cherries in half. Place inside a medium saucepan. Add honey, lemon zest and lemon juice. Cook for 5-7 minutes until juices begin to release and cherries become slightly wilted. Set aside and cool completely.
Add cooled cherry mixture to food processor. Pulse a couple times to break up the cherries. Blend mixture until almost pureed but still have some chunks of cherries.
Coconut Yogurt
Scoop yogurt into bowl. Add vanilla extract and whisk together. Gently fold in pureed cherry mixture, making sure to leave streaks of cherries to create that swirly tie-dye look for the popsicles.
Spoon mixture into popsicle mold. Make sure to leave at least ¼" space at the top to allow the liquid to expand. If your popsicle molds have slots for sticks, you can insert them before freezing. If not, freeze for 2 hours and then insert popsicle stick in the center of each one. Freeze for 6-8 hours or overnight.
