These caramelized peaches are great for summer entertaining. They are brushed with a cinnamon infused brown butter, sprinkled with brown sugar and grilled until perfectly tender and caramelized.
Place stick of butter in small saucepan. Heat on medium, swirling butter until melted. Butter will begin to foam up but then subside. Cook butter until small brown specks begin to form at the bottom of the pan. The butter will begin to have a very fragrant nutty aroma. Whisk in cinnamon and stir just until it is heated to bring out the flavor. Remove from heat and pour into a bowl to stop the butter from cooking.
Brown Sugar Mixture
In a bowl, combine brown sugar, 1 teaspoon cinnamon and salt.
Cinnamon Toast Crunch Crumbs
Place cereal inside Ziplock bag. With a wooden rolling pin or mallet, crush into small crumbs. Set aside.
Caramelized Peaches
Wash peaches and cut in half; remove pits. Brush cinnamon brown butter on both sides.
Preheat outdoor grill or grill pan. Spray with nonstick spray to prevent peaches from sticking. Place peaches, cut side down. Cook for 3 minutes without moving to get nice grill marks. Flip over and sprinkle brown sugar mixture on top. Drizzle additional brown butter on top. Cook for 2 minutes until sugar is melted and peaches are slightly soft.
Remove peaches from pan and place onto a platter. Serve with vanilla ice cream and crushed Cinnamon Toast Crunch.
