Churro Pancakes with Cinnamon Chocolate Sauce

These churro pancakes are brushed with melted butter and generously coated with cinnamon sugar. A delicious cinnamon chocolate sauce is drizzled on top and garnished with churro bites, whipped cream and fresh strawberries.

Pancakes 1 cup All-purpose flour 1 ½ tablespoon White granulated sugar ¾ teaspoon Baking powder ½ teaspoon Baking soda ¼ teaspoon Salt ¼ teaspoon Ground cinnamon 1 Large egg 1 tablespoon Butter unsalted, melted 1 teaspoon Vanilla extract 1 cup Buttermilk Cinnamon Sugar Topping 4 tablespoon Unsalted butter melted ½ cup White granulated sugar 1 tablespoon Ground cinnamon Cinnamon Chocolate Sauce ½ cup Heavy cream 4 ounces Semi-sweet chocolate chips ¼ teaspoon Ground cinnamon
Pancakes Sift flour, sugar, baking soda, baking powder, salt and cinnamon inside bowl.
In separate bowl, add buttermilk, egg, vanilla and melted butter. Mix until combined.
Whisk wet ingredients into dry ingredients. Mix just until incorporated. Make sure to not overmix.
Heat nonstick griddle or pan over medium-high heat. Pour ¼ cup of batter for 1 pancake.
Once bubbles begin to form and pop, flip pancake over. Cook for an additional minute.
Remove from pan and immediately brush with melted butter. Sprinkle generously with cinnamon sugar.
