Smoked Macaroni And Cheese

Smoked macaroni and cheese is outrageously cheesy.  Made with a mixture of 3 cheeses, it's lightly smoked and has a delicious golden crust that we all love.

STEP 1:  Melt butter inside dutch oven or large stock pot.

STEP 2:  Add flour and whisk for 1 minute until golden and bubbly.

STEP 3:  Add milk and half and half and whisk continuously for 2-3 minutes until sauce thickens.

STEP 4:  Add half of the cheddar cheese and smoked gouda cheese.  Stir until melted and smooth.

STEP 5:  Add cooked macaroni and stir until the noodles are completely covered in sauce.

STEP 6:  Pour half of the pasta mixture into baking dish.  Spread cheddar cheese and parmesan cheese.  Top with remaining pasta and finish with cheddar and parmesan.

STEP 7:  Place inside smoker at 225 degrees for 1 hour.
