Easy 4 Ingredient Guacamole Witch

Kristen - The Epicurean Mouse
This simple to make 4 ingredient guacamole is the perfect Halloween inspired appetizer. Ripe avocados, smashed together with grated garlic, fresh squeezed lime juice, and chopped cilantro. It's then shaped into a not so scary witch and served with warm tortilla chips.

Ingredients

Guacamole

  • 4 Hass avocados ripe
  • 1 Garlic clove peeled, grated
  • 1 Lime juiced
  • 1 tablespoon Cilantro chopped fine
  • Salt to taste

Hazel The Witch

  • 1 Hard boiled egg sliced in half
  • 1 Large green olive pitted, sliced in half
  • 1 Kalamata olive sliced in half
  • 2 cups Shredded carrots
  • 1 San Marzano mini tomato sliced in half
  • Sliced red onion 2 (1 ½") slices
  • 3 Roasted garlic cloves
  • 1 Cornichon
  • 1 English pea for wart
  • Blue corn chips

Instructions

Guacamole

  • Slice avocados in half and remove the pit. Using a spoon, scoop out the flesh of the avocado into a medium size bowl.
  • Use a fork to mash the avocados to desired consistency.
  • Peel garlic and use a microplane to finely grate into the mashed avocados.
  • Slice limes into quarters, leaving the center untouched. You will get so much more juice by slicing the lime this way. Next, squeeze lime juice into avocado mixture.
  • Wash and pick cilantro leaves. Using a sharp knife, finely chop cilantro. Then add to avocados.
  • Stir ingredients together and season with salt. Serve immediately.

Hazel The Witch

  • Spread guacamole onto a platter or oval shaped bowl.
  • Take hard boiled egg and slice in half. Place eggs in the middle of the dip, cut side up with the yolk exposed.
  • Cut large, pitted green olives in half. Place on top of the egg yolk, followed by sliced kalamata olives for her pupils.
  • Arrange shredded carrots on both sides of the guacamole, as well as on top for her bangs.
  • Place a cornichon beneath the sliced eggs for her nose. Then, add a green pea on top for a wart.
  • Slice a mini San Marzano tomato in half. Place under the cornichon to resemble her lips. Add 3 roasted garlic cloves inside the tomato for her teeth.
  • Arrange two strips of red onion above the hardboiled egg eyes for her eyebrows.
  •  Lastly, arrange blue tortilla chips in the shape of a witch hat.
