Ingredient Notes
Here are some notes on the ingredients. For a full list of ingredients, check out the recipe card below.
- Bread- I used a sour batard but any thick crusty bread will work. Ciabatta or French baguette are both good choices.
- Burrata- Available at most grocery stores. Burrata is much softer and creamier than fresh mozzarella.
- Strawberries- Choose strawberries that have a bright red color, a natural shine and fresh looking green caps.
- Basil- When selecting fresh basil at the store, look for vibrant green leaves free of dark spots. Avoid buying basil that is drooping or wilting.
- Garlic- I use whole garlic cloves. Once the bread is toasted, rub each side with the garlic.
- Balsamic vinegar- Balsamic vinegar is a dark, slightly sweet, richly flavored vinegar. It is used in salad dressings, marinades and sauces. You can find it in almost all grocery stores.
- Honeycomb- You can use raw honeycomb or simply drizzle your favorite honey on top of the strawberries.
- Olive oil- Use a good quality extra -virgin olive oil for the best tasting bruschetta.

Step By Step Instructions
STEP 1: Make balsamic reduction. In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat until the mixture reduces and slightly thickens, about 5 minutes. Set aside to cool.

STEP 2: Toast the bread. Heat grill pan on medium-high heat. Then, slice bread, about 1" thick. Brush both sides of the bread with olive oil. Place onto the hot grill pan. Grill the bread slices for 2-3 minutes per side or until crisp with nice grill marks.
STEP 3: Rub the bread with garlic. Take grilled bread, while it's still warm and rub both sides with garlic.

STEP 4: Spread the burrata. Carefully break apart the burrata into pieces and place onto the grilled bread. Use the back of a spoon or butter knife to spread the burrata over the bread. Then, sprinkle with salt and fresh ground black pepper.
STEP 5: Prepare the strawberries. Wash and hull strawberries. Using a sharp pairing knife, cut the strawberries into thin slices. Arrange the strawberries on top of the burrata.

STEP 6: Garnish the bruschetta. Drizzle the balsamic reduction over the strawberries. Then, top with fresh basil and honey. Serve immediately.
Expert Tips
The right type of bread is key to making good bruschetta. Choose a thick, crusty bread, like sourdough or Ciabatta. Softer breads won't hold up to the toppings and will get soggy quickly.
After toasting, while the bread is still warm, rub the bread with raw garlic. This will infuse a subtle garlic flavor onto the bread.
For the best tasting bruschetta, use fresh ingredients. I suggest buying any fresh ingredients just a day or two before you plan to make this recipe.
If making this recipe for a party, you can toast the bread several hours in advance and keep it inside an airtight container before serving.

FAQ
Burrata has a rich, creamy texture and a mild, slightly sweet flavor. The flavor of burrata is similar to mozzarella but more indulgent, due to the additional cream.
When in season, use fresh peaches, nectarines, plums, cherries and blackberries.
Typically, bruschetta is served warm off the grill. The topping is spooned over the toasted bread and served immediately.

Storage
Once assembled, these strawberry burrata bruschetta are best when they are served fresh. The moisture in the cheese and strawberries will eventually make the crispy bread soggy.
If you plan to store the bruschetta, keep the bread and toppings separate in airtight containers or Ziploc bags. Then, assemble when you're ready to serve.
