Baked Brie with Fig Jam

Nothing tastes better than this baked brie with fig jam. Flaky puff pastry wrapped around creamy brie, and baked until crisp and golden brown. Top this mouth watering appetizer with sweet apples baked with maple syrup, butter, and fresh thyme.

This quick and easy baked brie with fig jam is the ultimate holiday appetizer. I top the brie with fig jam, then wrap it with store bought puff pastry and bake it until golden brown. The melty brie, combined with the cinnamon thyme apples are so delicious together.

Sprinkle some pomegranates and candied pecans on top and you have one spectacular centerpiece for your next gathering.

Why You Will Love This Recipe

  • Creamy Brie- Brie is already creamy to begin with, but once it's baked it becomes ooey and gooey. You'll want to eat it with just a spoon!
  • Baked apples- These apples are tossed with maple syrup, butter, cinnamon and fresh thyme. They really help elevate the flavors in the baked brie.
  • Quick and easy to make- This deceptively easy baked brie comes together in less than 45 minutes.
  • Perfect for holidays- This warm brie is the perfect dish to make for Thanksgiving or Christmas.

Ingredient Notes

Here are some notes on the ingredients. For a full list of ingredients, scroll down to the recipe card at the bottom the page.

  • Puff pastry- You will find puff pastry inside the freezer section. You will need 1 sheet for this recipe. If you decide to add a hidden Mickey on top, use the second sheet to punch out your shape.
  • Brie cheese- You will need an 8 oz round of brie cheese for this recipe. Choose your favorite brand.
  • Fig jam- I used store bought, but feel free to make your own if you're feeling up to it.
  • Apples- I love Honey Crisp apples, but you can also use Braeburn or Fuji.
  • Maple syrup- Use pure maple syrup to sweeten the apples.
  • Fresh thyme- Make sure to use fresh, rather than dried in this recipe.
  • Cinnamon- I add just a little to the apples because apples and cinnamon just go together.
  • Egg- I brush the puff pastry with beaten egg so that it seals the dough and bakes up golden brown.
  • Turbinado/raw sugar- I sprinkle some on top of the egg washed puff pastry. It gives it a nice crunch and helps with the browning process. It also adds a touch of sweetness.

Step By Step Ingredients

STEP 1: Prepare baked apples. Preheat oven to 400℉. Core and slice apples into ½" slices. Toss with maple syrup and cinnamon. Place in a baking dish and top with butter and sprigs of thyme.

STEP 2: Score brie. Using a sharp knife, score the top of the brie cheese. This will help the fig jam infuse into the brie as it bakes.

STEP 3: Wrap brie with puff pastry. Line sheet pan with parchment paper. Lay out defrosted puff pastry. Place brie in the center of your pastry. Spread fig jam overtop of the brie cheese.

Fold each corner over the brie, creating a squared envelope. If adding a hidden Mickey, punch out shape with second sheet of puff pastry. Place in the center of the pastry.

STEP 4: Bake brie. Brush the pastry with beaten egg. Sprinkle lightly with raw sugar. Bake for 25-30 minutes or until the pastry is a deep golden brown.

STEP 5: Bake apples. As the puff pastry is baking, add your apples to the oven. Bake for 10 minutes. Apples will still have a bite to them but will not be crunchy. Do not over bake them, as they will turn mushy.

STEP 6: Assemble. Top baked brie with cooked apples. Sprinkle pomegranates, candied pecans, and fresh thyme leaves on top. Serve with crackers, or thick crusty bread.

Expert Tips

Thaw your puff pastry overnight inside the refrigerator. If you are in a hurry, remove sheets from the box and leave out at room temperature. Thaw for 20-30 minutes as you prepare your other ingredients.

Puff pastry needs to be baked at a high temperature. The high heat is necessary, as this creates steam inside the oven, so the dough rises and all the crispy layers separate.

Don't forget to brush your pastry with beaten egg. This helps to seal your pastry and helps with browning it as well.

Let the baked brie rest for 5 minutes before serving. The melted brie is super hot once it comes out of the oven. Do this to try and avoid anyone burning their mouth.

FAQ

Do you take the rind off of the Brie before baking?

The rind is completely edible and safe to eat. It also holds the shape and keeps the cheese from melting out.

Can I make this ahead of time?

Yes you can. Prep this baked Brie 24 hours in advance. Once you have folded your pastry, cover it with plastic wrap and refrigerate. When ready to bake, brush with beaten egg and sprinkle with raw sugar. Follow the baking instructions in the recipe.
*It may take a little longer to bake, since it's coming straight out of the refrigerator.

What to serve with baked Brie?

Crackers, pretzels, toasted baguette, nuts, and fresh fruit. You can also place it in the center of a charcuterie board and serve alongside other cheeses and cured meats.

Storing and Freezing

Store the baked brie with fig jam inside an airtight container. Refrigerate for up to 5 days.

Leftovers can be reheated the same way you baked it originally. I suggest using an oven rather than a microwave, as this will make the puff pastry tough and chewy.

Freezing

I do not recommend freezing any leftovers, due to the temperature and the change in texture it will cause in the Brie cheese.

Ingredients
  

Baked Brie

  • 8 oz Brie cheese scored
  • ¼ cup Fig jam store bought or homemade
  • 1 sheet Frozen puff pastry thawed
  • 1 Egg beaten
  • 2 teaspoon Turbinado sugar

Baked Apples
