There really is nothing quite like a buffalo chicken grilled cheese. This easy to make sandwich is made with leftover rotisserie chicken, store bought buffalo sauce, ranch dressing and cheese. Lots of cheese!!

The buttery, crispy bread and spicy, creamy filling make this sandwich irresistible. Not only does it taste outrageously good, but it’s so much fun to make inside a Mickey waffle maker!

Ingredient Notes

Here are some notes on the ingredients. For a full list of ingredients, scroll down to the recipe card at the bottom of the page.

  • Bread- I went with sliced buttermilk bread, but any kind of bread will work.
  • Chicken- Use rotisserie chicken or cooked shredded chicken breast.
  • Buffalo sauce- I used Sweet Baby Ray’s Buffalo Sauce but you can use your favorite brand or make it from scratch if you’re feeling adventurous.
  • Cheese- I use a combination of Monterey Jack, sharp cheddar and cream cheese.
  • Ranch dressing- I use this to flavor the chicken but also to cut back on some of the heat from the buffalo sauce.
  • Blue cheese- To be honest, I’m not a huge fan of blue cheese. But since the two go hand in hand, I chose Gorgonzola since it’s on the mild side.
  • Butter- Use salted or unsalted butter,
  • Mayo- Use full fat or olive oil based.
  • Sour cream- Use full fat for the best flavor.
  • Heavy cream- Feel free to use heavy cream or milk to thin out your blue cheese dressing.
  • Chives- Use fresh chives for this recipe. You can find them inside the produce section.

Step By Step Instructions

STEP 1: Make blue cheese dressing (optional). In a small bowl, whisk together mayo, sour cream, white vinegar, lemon juice and heavy cream. Add chopped chives and crumbled blue cheese. Stir to combine. Season with salt and pepper.

STEP 2: Make cheese spread. In a medium bowl combine softened cream cheese, Monterey Jack cheese, cheddar cheese, garlic powder and onion powder. Season with salt.

STEP 3: Make chicken filling. In a separate bowl mix together shredded chicken, buffalo sauce, ranch dressing and salt.

STEP 4: Assemble sandwiches. First slice crust away from bread. Next, combine mayo and softened butter. Spread mixture on one side of each piece of bread. Turn bread over and spread cheese mixture on the inside of the bread.

Top with buffalo chicken and sprinkle with additional cheddar cheese. Place remaining slices of bread on top to close sandwiches.

STEP 5: Cook grilled cheese. Spray Mickey waffle maker generously with nonstick spray. Place sandwich directly over Mickey griddle and close lid. Cook for 5 minutes until golden brown and cheese is melted.

Expert Tips

Try not to overfill your sandwiches or else the liquid from the buffalo sauce will make the bread soggy. Divide the filling and cheese equally among all the sandwiches.

Cook sandwiches on medium heat so it gives the cheese enough time to melt without burning the bread.

Use shredded cheese. Shredded cheese melts more quickly and evenly than sliced cheese.

To get Mickey’s full face, I slice off the crust in order for it to fit directly over the griddle.

Make sure to use both mayo and butter to coat the grilled cheese. It’s makes the crispiest crust. Don’t skip this step.

What other cheese can I use?

You can really use any combination that you like. Pepper Jack, Gouda, American, Mozzarella, blue cheese and Swiss are some popular choices.

What kind of bread is best for grilled cheese?

Sourdough, Pullman Bread, Brioche, Multigrain, Deli Rye and Pumpernickel are all great options.

Is butter or mayo better for grilled cheese?

I love the taste of the butter but I also like the fact that mayo has a high smoking point and will yield a crispier crust. For this reason, I mix the two together.

Storing

This buffalo chicken grilled cheese is best enjoyed right off the griddle. But if you have any leftovers, wrap each sandwich in foil and refrigerate for up to two days. When ready to eat, place inside a toaster oven for 12-15 minutes to crisp up the bread and warm up the filling.

Store any leftover filling inside the refrigerator for up to five days.

Ingredients
 

Blue Cheese Dressing (optional)

  • 1 oz Blue cheese, Gorgonzola
  • 1/4 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1 tbsp Lemon juice, fresh
  • 2 tbsp White vinegar
  • 1 tbsp Chives, finely chopped
  • 2 tbsp Heavy cream
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Three Cheese Spread

  • 4 oz Cream cheese, softened
  • 1/4 cup Sharp cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Salt
  • 1 cup Sharp cheddar cheese, divided among sandwiches

Buffalo Chicken Filling

  • 2 cups Rotisserie chicken, shredded
  • 1/2 cup Buffalo sauce
  • 1/4 cup Ranch dressing
  • 1/2 tsp Salt

Bread Coating

  • 1/4 cup Mayonnaise
  • 1/4 cup Butter, softened
  • 12 slices Buttermilk bread, or your favorite bread

Instructions
 

Blue Cheese Dressing

  • In a small bowl, combine mayo, sour cream, lemon juice, white vinegar and heavy cream. Whisk together until smooth. Add crumbled blue cheese and chopped chives. Season with salt and pepper.

Three Cheese Spread

  • In a small bowl, add softened cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, onion powder and salt. Mix together until evenly incorporated.

Buffalo Chicken Filling

  • Place shredded chicken inside a medium size bowl. Add buffalo sauce, ranch dressing and salt. Stir together until the chicken is evenly coated.

Assembly

  • Preheat Mickey waffle maker on medium heat. Combine softened butter and mayonnaise. Remove crust from bread with a serrated knife. Spread butter/mayo mixture on top of all 12 pieces of bread.
  • Turn 6 slices of bread upside down and spread three cheese filling. Top with buffalo chicken mixture. Sprinkle with cheddar cheese. Top with remaining bread to close sandwiches.
  • Spray griddle with nonstick spray. Place one sandwich at a time onto Mickey griddle. Firmly press down and cook for 5 minutes or until golden brown and cheese is completely melted. Serve with blue cheese dressing and celery sticks.

Notes

*These grilled cheese sandwiches can be made inside a skillet if you decide not to make them Mickey shaped.  Feel free to leave the crust on and follow the same directions in the recipe.
* The yield may very depending on what size bread you use.  Try to eye ball and divide the cheese spread, buffalo chicken mixture and cheddar cheese evenly among the sandwiches.
