  • 1 tbsp Olive oil
  • 2 Boneless, skinless chicken breast, cut into bite-size pieces
  • 1 1/2 tsp Salt
  • 1/2 tsp Fresh ground black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • 1/2 tsp Chipotle pepper, ground
  • 4 cups Leafy greens, spring mix, romaine, arugula, kale or spinach
  • 1 cup Carrots, shredded
  • 2/3 cup Celery, peeled and diced small
  • 4 Campari tomatoes, sliced
  • 1/3 cup Blue cheese , crumbled
  • Fresh Dill , for garnish

Buffalo Sauce

  • 1/4 cup Butter
  • 1/3 cup Hot sauce, adjust to your personal preference
  • 1 tbsp White vinegar
  • 1/2 tbsp Honey

Ranch Dressing

  • 1/3 cup Sour cream
  • 1/3 cup Buttermilk
  • 1 tbsp Mayonnaise
  • 2 tbsp Ranch seasoning
  • 1/2 Lemon, juiced
  • 1 Garlic clove, minced fine
  • 1 tbsp Fresh chives , chopped
  • Salt and pepper , to taste
