- Coffee ice cream- For an extra coffee kick, I use Haagen-Dazs coffee ice cream.

Substitutions
- Cold brew coffee- If you don’t have cold brew coffee, you can use chilled brewed coffee or espresso. However, cold brew offers a smoother flavor.
- Oat milk- Substitute with any milk of your choice, such as soy milk, almond milk, or dairy milk.
- Coffee ice cream- Feel free to use any flavor of ice cream you prefer, including vanilla, chocolate or caramel for a different twist.
Step By Step Instructions
STEP 1: Make brown sugar syrup. In a small saucepan, mix together the brown sugar, water and cinnamon stick. Bring to a boil and simmer for 5 minutes. Remove from the heat and stir in the vanilla extract. Then, pour into desired jar and let cool at room temperature.


STEP 2: Scoop ice cream. Scoop coffee ice cream into two glasses. Then, place inside the freezer to chill for 15 minutes (optional).


STEP 3: Prepare iced coffee. In a shaker filled with ice, combine cold brew coffee and 4 tablespoons of brown sugar syrup. Shake for 30-60 seconds.
STEP 4: Assemble. Remove cups with ice cream from freezer. Strain sweetened cold brew coffee over the ice cream. Then, slowly pour oat milk on top.


STEP 5: Garnish. Add a dollop of homemade whipped cream with a sprinkle of cinnamon on top . Serve immediately and enjoy!
